Here's pretty good muffin! Here's pretty good muffin!
Number of Servings: 12


    2 cups almond flour/almond meal
    2 teaspoons baking powder
    1/4 teaspoon salt
    1/2 cup coconut oil, melted
    4 eggs
    1/3 cup water
    Sweetener to taste (not added to nutritional totals)


1- Preheat oven to 350 F.
2- Spray muffin tin with baking spray.
3- Mix dry ingredients together well.
4- Whisk eggs, then add wet ingredients to dry and mix thoroughly.
5- Fill muffin tins about 1/2 to 2/3 full and bake for about 15 minutes.

Variations: Add 1 cup fresh blueberries to mixture before adding to muffin tin, or place mixture in muffin tin then take a teaspoon of your favorite jam on each muffin and push it into the middle of the dough. (These aren't included in nutritional information.)
