    Sour dough starter:
    1 c buttermilk (you can use plain yogurt as well)
    1 c whole wheat flour or rye
    2 tsp salt
    (Mix buttermilk and flour, put in a jar (or use a plastic bag), sprinkle with salt, cover with plastic and keep at room temperature for 2 days.

    5 1/2 c water
    2 c rye grains
    1 1/2 c mixed cut or rolled grain (like oat, rye, wheat bran)
    1 small can beer
    Sour dough starter (see above)
    2 1/4 c rye flour
    1 3/4 c whole wheat flour
    2 tsp salt
    2 1/2 tsp yeast
    1 3/4 c mixture of seeds (sunflower, pumpkin, and flax mixed or alone, all are yummy)


You can actually use any mixture of seeds, they are all yummy. Sunflower and flax are the most popular.
No kneading needed-- just stirring, this stuff is like thick cement and kneading won't work.


Boil water and rye grain and cut or rolled grain together for a few minutes, then leave to cool. Add beer, sourdough starter, flours and salt. Now take about 1 1/2 cups of this mixture out, cover in plastic and store in the refrigerator for next time's sourdough starter. Mix yeast and seeds into the bread dough and put into a greased bread pan. Leave 4 hours to rise in a warm place. Bake 90 minutes at 390 degrees Fahrenheit. Most Danes leave their bread for a day before eating to develop more flavor. I admit that I don't wait that long. It will be heavy and feel like a brick on the outside, but will cut into beautiful chewy slices! 15 slices per loaf, 1 slice per serving.
