Introduction

Cauliflower rice seasoned with the same herbs and spices as regular pilaf but without the carbs. Goes great with salmon! Cauliflower rice seasoned with the same herbs and spices as regular pilaf but without the carbs. Goes great with salmon!

Ingredients

    2c cauli-rice, about 300 grams
    1 stalk celery, diced
    1 slice (thin) onion, diced
    1/2 colored pepper, diced
    1 clove garlic, minced
    1T olive oil
    1/4 c frozen peas
    1/2 t boullion
    1/4 c water
    Salt and pepper to taste
    a dash of thyme or poultry seasoning
    a small bay leaf

Directions

Sauted celery, onion and pepper in olive oil till tender, add garlic and cook one minute more. Add 'rice' and peas and cook for another minute. Add boullion and 1/4 c water. Stir until heated through. Season with salt and pepper (I used seasoned salt). You could top it with a few chopped pecans as well but make sure to adjust the calorie/fat/carb content.

Serving Size: makes 2 1.5 cup servings
