Ingredients

    2 cups Bob's Red Mill - Gluten Free All Purpose Baking Flour
    1 1/2 sticks Butter
    3/4 cup Granulated Sugar
    1/4 cup agave nectar (corn syrup or honey would probably work, too)
    1 cup chocolate chips
    1/4 cup Trader Joe’s Chocolate Sunflower Seeds

Tips

This can easily be made vegan, just replace the butter with Earth Balance (not Smart Balance, which doesn't bake nearly as well).
It's gluten free, and works perfectly in place of butter.


Directions

Turn oven to 350 degrees.
Beat sugar and butter together until fluffy.
Slowly add agave and beat until well combined and fluffy again.
Add flour and beat until well combined.
Stir in chocolate chips and chocolate covered sunflower seeds
Drop by heaping teaspoon onto ungreased cookie sheet.
Cook for 8-12 minutes, until edges turn golden brown.

These will be VERY SOFT when they come out of the oven. You'll need a good thin spatula and a steady hand. Cool them on a plate, not a wire rack (they will break apart and fall through the wire rack). They will be much less fragile when cool.

Serving Size: Makes 36 cookies, a serving size is entered as one cookie.

Cooking time entered on this recipe assumes you're making a dozen at a time, and cooking a total of 3 batches, and is the combined total of the time for three batches. Don't let your cookies stay in there for 30 minutes!
