    1 lbs. ground turkey, low fat
    3/4 pckg. whole wheat lasagna noodles
    2 packets spaghetti seasoning mix
    1 12 oz. low fat cottage cheese
    1 bunch spinach, washed, stems trimmed and chopped
    1 small cans mushrooms, pieces
    2 cans tomato sauce
    1 cans diced tomatoes
    2 cups shredded cheddar cheese
    2 cups shredded mozzarella cheese


1. Preheat oven to 350F. In 6-quart pot boil water for noodles. Once boiling, place noodles in water till softened.

2. In large skillet, brown ground turkey. Add seasoning packets, tomato sauce and diced tomatoes. Stir till heated through. Add spinach, mushrooms, and cottage cheese. Mix thoroughly.

3. In greased 9x13 pan layer noodles, meat sauce, cheese. Repeat 3 times. Bake at 350F for 60 minutes.

Serving Size: makes 8 servings
