    I tsp Extra Virgin Olive Oil
    1/2 cup chopped Leeks
    2 cloves Garlic, sliced
    1 med zucchini - quartered and sliced
    1 broccoli crown - chopped
    2 Fresh Ripe plum tomatoes, chopped
    1 cup beet greens, leaves only
    1 cup vegetable broth
    1/2 tsp ground cumin
    1/4 tsp ground tumeric
    1/4 tsp ground cayenne pepper
    1/2 tsp sea salt
    Juice of 1/2 lemon
    1 cup Vegetable Broth


Cook, leeks, garlic and olive oil on high or until leeks begin to brown on edges.
Add vegetable broth and spices.
Stir in zucchini, tomatoes, broccoli stem, tomatoes and beet greens
Cover and simmer on med for 10 min.
Add Brocolli tips and lemon juice
Simmer 15 min uncovered until liquid is evaporated
Makes topping for 4 large russet baked potatoes.
