Ingredients

    Boneless Chicken Breast
    Basil
    Thyme
    Tarragon
    Black Pepper
    1 lemon
    Kraft Fat Free Italian Dressing
    2 bags of Fresh Express Salad - Green and Crisp

Tips

- I used dried herbs but you could substitute fresh ones if available. When using fresh herbs, use 1 tbsp instead of 1/2 tsp of each herb.
- I grill these on a contact grill set on high, but you may grill on a gas or charcoal grill if you desire.
- If you do not have a zester, a fine grater would be a good substitute.
- I prefer slicing chicken breast into thinner cutlets or using chicken tenders for quick grilling and good spice coverage.


Directions

Zest approximately 1 tsp of the outer (yellow) peel into a small bowl. Add basil, thyme, tarragon, and pepper to the lemon zest. Place boneless chicken breast pieces in a medium bowl and coat lightly with olive oil. Sprinkle both sides of chicken with herb/spice mix. Cover and let sit in refrigerator for 15 - 30 mins. Grill chicken until done in the middle. Let sit for 5 - 10 mins. Slice into strips or chunks. Separate salad mix evenly into 8 bowls. Top each salad with chicken and 2 tbsp of dressing. Enjoy!
