Ingredients

    2 medium eggs
    5 gram butter
    50 ml milk

Directions

Always start with eggs at room temperature - not straight from the fridge
Beat the eggs gently with a fork and add the milk
Add salt and pepper to taste
Heat butter in a hot saucepan
Reduce to a medium eat
Pour in eggs and gently stir with a wooden spoon to remove the egg stuck to the sides and bottom
Remove from the heat as soon as the mixture looks firm throughout but still quite wet
Continue to stir when removed from the heat until the eggs are no longer wet

Serve with buttered toast. Delicious with bacon or smoked salmon
