I was looking to make White Chili one day, and all the recipes I found were too complicated. Since I knew White Chili was basically white beans, chicken and chilies, I threw this together and was pleased with the results. Number of Servings: 6

Ingredients

    1 1/2 cups Chicken Broth
    1 Chicken Breast, raw or cooked
    1 cup Onions, raw, chopped
    2 Serrano Peppers, finely chopped, with seeds
    1/4-1/2 teaspoon cayenne pepper
    1 teaspoon ground cumin
    1 teaspoon garlic powder
    4 cups or 2 cans Cooked navy or white beans. If using canned beans, you do not need to drain them.

Directions

Combine all ingredients in saucepan. Bring to boil and simmer until chicken is cooked through, if you are using raw chicken. Remove the chicken breast, chop into small pieces and return to pot. If you have cooked chicken on hand, add the equivalent and simmer about 20 minutes.

Serving Size: Makes 6 one cup servings
