Ingredients

    1/2 pkg Angel Hair Miracle Noodles
    1 small scallions, sliced or diced
    1/2 c carrots, thinly sliced
    1/4 c mushrooms, thinly sliced
    1 tsp ginger, grated
    1/4 to 1/2 c red bell pepper, thinly sliced
    3 oz shrimp, whole or chopped
    red pepper flakes, to taste (optional)
    1/4 to 1/2 cup kimchi, chopped (optional)

Tips

The kimchi is completely optional. It's an acquired taste and may not be available in all areas, consider adding bokchoy or regular cabbage. You could add bean sprouts, water chestnuts, peas, etc. You can garnish the top of the soup with a drizzle of fish sauce, sesame oil, or hot pepper oil.


Directions

Bring 1-2 cups of water (chicken or vegetable broth can be substituted) to a slow boil. Add all vegetables, ginger, and red pepper flakes and allow to cook until vegetables are tender-crisp. Add shrimp and cook until done, 2-3 minutes. While shrimp is cooking, remove noodles from package and rinse thoroughly. Add kimchi to soup and reduce heat to low. Place rinsed and drained noodles into a serving bowl and ladle soup over the top.
