    1 full head cauliflower, steamed
    3-4 tbsp butter
    2 tbsp whipped cream cheese
    .25 c sour cream
    salt and pepper to taste
    .75 c shredded cheddar

    All or any of these ingredients can be substituted or eliminated depending on your personal taste.


Steam cauliflower until very tender (nearly overdone). Let cool slightly. Using a masher, hand blender, immersion blender or other type utensil, cream together cauliflower, butter, cream cheese, sour cream and salt and pepper. Blend until your preferred consistency. Serve immediately or place in baking dish, top with shredded cheese and bake at 350 degrees, until warmed through and cheese on top is melted.
