Introduction

You need only three ingredients for these healthy muffins. They are great if you have a sweet tooth or just want something you can grab and go in the morning or for an afternoon snack. You need only three ingredients for these healthy muffins. They are great if you have a sweet tooth or just want something you can grab and go in the morning or for an afternoon snack.
Number of Servings: 12

Ingredients

    1-15 oz. can of solid pumpkin
    1 dry cake mix-any kind (my family loves Spice or any kind of Chocolate cake mix)
    3/4 cup semi sweet chocolate chips or vanilla chips
    *you can add 1/2 cup of water if you think it is too thick, although it will be a thick consistency

Directions

Preheat oven to 400 degrees
Mix one solid can of pumpkin together with any dry cake mix (do NOT add egg or oil).
It is usually a pretty thick consistency, so feel free to add 1/2 cup of water to it as well.
Then add 3/4 cup of semi sweet choco. chips or vanilla chips
Scoop into muffin pan.
Makes 12 nice sized muffins
Cook for 20 minutes.
Let cool for 5 minutes and then remove from pan and place on a cooling rack
