Ingredients

    1 tbsp olive oil
    2 sweet yellow onions, thinly sliced
    1-1/2 tsp salt, divided
    3 lbs medium red potatoes, peeled and quartered
    6 garlic cloves, peeled and halved
    2/3 cup reduced-fat sour cream
    1/2-2/3 cup fat-free milk
    1/2 tsp pepper
    2 tbsp light margarine

Directions

1. Heat oil in a large non-stick skillet over medium heat; add onions and 1/2 tsp salt. Cook and stir for 10-15 minutes, until moisture has evaporated and onions are completely wilted. Reduce heat to medium-low. Cook and stir for 20-30 minutes or until onions are caramelized. (If necessary, add water, 1 tablespoon at a time, if onions begin to stick to the pan.)

2. Meanwhile, place potatoes and garlic in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 20 minutes or until tender.

3. Drain potatoes; place in a large bowl. Add sour cream, milk (starting with 1/2 cup and add more if necessary), pepper, remaining 1 tsp salt, and margarine. Mix with a hand mixer until smooth. Stir in onions and serve.

Serving Size: Makes 10 servings
