Number of Servings: 12

Ingredients

    2/3 c Splenda
    1/4 c applesauce
    1 egg
    1 c or 2 bananas
    1/4 c water
    1 2/3 c wheat flour
    1 tsp baking soda
    1/2 tsp salt
    1/4 tsp baking powder
    2-3 tbsp vanilla extract
    2-3 tbsp cinnamon

Directions

Preheat over to 325 degrees. Spray one 9x5x3 inch loaf pan with non-stick cooking spray. Mix all the ingredients together and bake for 30-45 minutes or until top is firm to the touch and golden brown. I added vanilla extract and cinnamon to taste and used I Can't Believe It's Not Butter Spray. Heated for 20 seconds in the microwave...DECLICIOUS!

OK Splenda after taste, found it too sweet. 1/3 cup of sugar (not splenda) would be just fine. I LUV cinnamon,1 tbsp. would be fine, as well as the vanilla. No salt needed. Increased applesauce & water to 1/2 cup, because I added 1/2 cup all bran (fiber boost). Added 1/4 cup walnuts. Got 14 slices.

I found this recipe here this morning and made them right away. OMG! These are so good!! I used whole wheat pastry flour instead of reg. whole wheat and I added 1/4 C. of chopped walnuts. This only raised the fats and calories a bit, ending up with 111 cal. and 2 g. fat, so I had 2 for breakfast. - 9/18/12
