Number of Servings: 9


    1 chicken quarters, boiled with skin removed, and deboned.
    1 (15 ounce) can chili ready tomatoes
    1 (10 ounce) can enchilada sauce
    1 can tomatoes with green chiles
    1 medium onion, chopped
    1/4 cup chopped green bell peppers
    1 (4 ounce) can chopped green chile peppers
    2 cloves garlic, minced
    3(14.5 ounce) cans chicken broth
    1 teaspoon cumin
    1/4 cup chopped fresh cilantro
    1 teaspoon salt
    1/4 teaspoon black pepper
    1 can Mexican corn
    1 can pinto beans, rinsed
    1 can chili beans
    1-2 cups rice (instant works fine for this soup)


Mix all ingredients except rice, in a pot and bring to a boil. Add rice after soup begins boiling. Let cook until rice is done. Top with lowfat cheddar/jack/or queso cheese and serve with oven crisped tortilla chips.

Serving Size: makes 9 hearty bowls
