1 1/2 Cups raw sunflower seeds (that have been soaked 6 - 8 hours and then drained)
1 Tbsp dry parsley (or 1/4 bunch fresh parsley)
1 Tbsp dry basil (or 1 bunch fresh cilantro)
1/4 Cup extra virgin olive oil
1/2 Clove garlic (or 1/4 tsp dry garlic - not garlic salt)
4 medium carrots, grated or chopped
Juice of one fresh lemon
1/4 Tsp. sea salt
Dash of cayenne pepper
Can be used raw immediately as a spread for vegan sushi replacing the "rice". Spread on sandwiches, crackers etc. Or can be used as a dip for veggies. Can be shaped into patties and lightly baked or fried. Best flavor if left over night in the fridge. Enjoy!
2. Remove sunflower seeds from mixing bowl.
3. Add to mixing bowl the rest of the ingredients and process.
4. Add back to the mixing bowl the processed sunflower seeds to the veggie mixture.
5. Mix again until smooth.
