Substitute whole wheat flour and clean sugar, these are really good. Substitute whole wheat flour and clean sugar, these are really good.
Number of Servings: 10


    2 c lowfat buttermilk
    1/4 c vegetable oil
    2 eggs
    1 3/4 c. whole wheat pastry flour
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    2 T. evaporated cane juice


Can add flax or chia seeds for more protein and fiber.


Using whisk, combine buttermilk, eggs, and oil. Add all dry ingredients. Let sit to rise for five minutes or so while griddle pan heats up. Makes 10 large pancakes. Serve with maple syrup or fruit.
