Ingredients

1 1/2 cup regular rolled oats
1 cup flaked coconut
1 tsp cinnamon
1/2 tsp allspice
1/4 cup whole wheat flour
1/2 cup raisins
1/2 cup chopped dates
1/2 cup applesauce
2 ripe medium bananas
1 tsp vanilla extract
Tips
Original recipe called for
- 1/4 c almond meal we used ww flour
- 1/4 cup of oil we replaced w/ applesauce
- 3 bananas only had 2 so used 1/4 cup applesauce
- 1/2 c nuts had none so omitted
- forgot the 1/2 tsp salt
Very forgiving recipe - use what you have and adapt the recipe.
Directions
Preheat oven to 350 F. Line sheet pan with parchement paper.
Combine oats, flour, coconut and dried fruit. Stir in spices.
In another bowl mash bananas and add applesauce and vanilla extract. Pour over dry ingredients and stir until well combined.
Drop spoonfuls of dough onto parchment and flatten slightly. Bake 20 minutes or until edges are golden brown.
