    16 lg tortilla shells
    1 C Cheddar cheese, shredded
    1 c Mozarella cheese, shedded

    Mix cheeses and split into 2 one-cup portions

    3 cans cream of chicken soup (reduced sodium/low fat)
    1 can diced green chiles
    1 cup fat free sour cream
    3 C cooked chicken or turkey, diced (nutrition info based on turkey)


Mix together filling ingredients. Add 1 cup cheese mix.
Fill each shell with approx 1/2 cup filling mixture, roll and place in baking dish. Repeat.
Top with remaining filling and 1 cup mixed cheese.
Bake at 375 for 25 minutes

Serving Size: makes 16 enchilladas (each enchillada is 1 serving)
