Number of Servings: 7


    Cauliflower, frozen, defrosted, 700 grams
    Leeks, 1 leek sliced
    Parsnips, 0.5 cup slices / chopped
    *Canola Oil, 2 tbsp
    Salt, 1 tsp
    Pepper, black, 2 dash
    4 Cups water


May need to add some water so isn't too thick while blending.
Hard not to go back for seconds :)


Brown leek well, add the parsnip then add the cauliflower and steam for a bit. Add salt and pepper, continue stirring. Add water and bring to boil. Let cook for a while.
After soup has cooled blend with stick blender.

Serving Size: 7-8 1 Cup servings.
