Ingredients

    16 oz cranberries, fresh or frozen (if frozen process frozen)
    1 medium red bell pepper
    1/2 large purple onion
    1 Granny Smith apple
    1 cup sugar
    1/2 cup unsweetened apple juice
    1 t. lime juice
    2 T. chopped jalapeno peppers (canned)

Tips

I have not tried this with artificial sweetener but it would cut the calories quite a bit (instead of 100 cal per serving it would be about 30).


Directions

Put cranberries, bell pepper, onion and apple into a food processor and pulse until finely chopped (I used frozen cranberries and ended up adding some of the apple juice during the food processing step). Place in a glass bowl and mix in apple juice, lime juice, sugar and jalapeno peppers. Best if left overnight to mingle the flavors.
