Introduction

Number of Servings: 12

Ingredients

    3 lg bananas (very ripe) mashed
    1/2 cup splenda
    2 egg whites
    4 oz apple sauce ( I use the snack pack)
    1 1/2 c Whole wheat flour
    1 tsp baking powder
    1 tsp baking soda
    2 TBSP milled flax seeds
    2 TBSP ground wheat germ
    1 tsp vanilla

Tips

* Do not over mix or muffins will be heavy and dense.

Directions

Preheat oven to 375*
In a small bowl mix flour, baking powder, baking soda, flax seeds, and wheat germ. Set aside.
In large bowl, mash bananas, add splenda, egg whites, and apple sauce. When well mixed ( about 3 min mixing on high speed) slow speed to medium*. Add dry ingredients about a 1/2 cup at a time, adding more when just mixed until all is mixed. Add vanilla, mix for 1 min. Turn off mixer fold in chocolate chips.
Ready to spoon in to muffin pan and bake!

Serving Size: makes 24 mini muffins or 12 large muffins
