    4 Lg Eggs
    1/4 C. 1% Milk
    1/4 C. Chopped Onion
    1/2 C. Chopped Green Pepper
    1/4 C. Chopped Mushrooms
    1/4 C. Cheddar Cheese (reduced fat)
    2 Tbsp. Smart Balance Buttery Spread (Divided)


Saute the conions, peppers and mushrooms in 1 Tbsp of the Smart Balance until soft tender. While those are cooking, in a small bowl beat the eggs and milk, then when veggies a ready add the other Tbsp. of Smart Balance, and the egg mixture. Cook until sides are set, run a spatula around the outter edge then sprinkle the cheese on top and put it in the oven at 350 degrees for about 10-15 minutes. Remove from oven cut into 4ths salt and pepper to taste. ENJOY
