Introduction

This is my take on the classic meatloaf. I'm not a huge fan of ground turkey as I feel it leaves a bit to be desired in the taste department, but with the addition of these ingredients, the taste and even the color of the meatloaf are just like its beef equivalent. Ingredients

    1 pound lean ground turkey (I used 93% lean)
    1 egg, beaten
    0.25 cups bread crumbs (I used whole grain for a fiber boost!)
    0.25 cup parmesan cheese
    1 cup frozen pepper and onions (you can cut your own fresh veggies if you like)
    0.5 cup tomato sauce

Tips

If you're trying to be sodium conscious, like myself, try using a low sodium or sodium free tomato sauce. Foods in cans and jars are often times loaded in sodium, which is no good for your waistline!


Directions

Preheat oven to 350 degrees Fahrenheit. Beat the egg in a small cup or bowl. Mix all other ingredients in a larger bowl all together. Then add the egg, making sure to mix that in thoroughly. When everything is combined, put it into a greased meatloaf pan. I use the throw-away foil kind, but if you're more environmentally conscious, you might want to try to find a bread pan. Cook meatloaf in the oven for 45-60 minutes, or until done to your liking. Lastly, enjoy! :)

Serving Size: Makes one loaf, divided into 8 slices. Each slice is 1 serving.
