Super easy weeknight chili. Super easy weeknight chili.
Number of Servings: 6


    1 lb ground turkey (93%lean)
    1 pkg Carrol Shelby's Chili Kit
    1 can stewed or diced tomatoes
    1 can Rotel Tomatoes & Green Chiles
    1 can kidney beans
    1 can pinto beans
    1 cup water
    1/2 onion
    1/2 bell pepper


I usually serve over one serving of brown rice and top with a little cheese (if I have calories to spare). NOTE: actual calories will be less if you omit the other pouches in the kit and drain the beans like I stated. The nutritional info factored those in.


Dice your onion and bell pepper. Add to large pot with turkey. Brown all three together. Drain if desired. Add both cans of tomatoes and seasoning pouch from kit. Mix well. I don't use anything else from the kit except maybe a little cayenne, just depends on the crowd. Simmer 20 minutes or so until the tomatoes are very soft. Add in both (drained) cans of beans. Simmer another 10 minutes then serve.
