Introduction

This is dang near perfect, but I will be tweaking it a bit more...I made it first w/out brown sugar, then tried a little brown sugar on my plate w/the first patty, and it really brought out the flavors - esp. the fennel seed. Ingredients

    *Coleman Natural - Uncured Hickory Smoked Bacon, 12 oz.
    *Ground Turkey Jenni-O 93/7, 20 oz
    Sage, ground, 2 tsp
    Marjoram, dried, .25 tsp
    Salt, .5 tsp
    Pepper, black, 1 tsp
    Garlic powder, 1 tsp
    *Onion powder, 1 tsp
    *Ground Mustard, 1 tsp
    *Fennel seed, 1 tsp
    *Crushed Red Pepper, 1 tsp
    Parsley, dried, 1 tsp
    Brown Sugar, 1 Tbsp, packed

Directions

Rough chop bacon and process in food processor until it looks like ground meat. Add chunks of ground turkey and the spices, then process just to combine.

Form into patties and fry 5-7 minutes on each side.

Serving Size: Makes 12 generous patties
