This is a dessert prepared during holy days and festivals both at home and in the temples. This is a dessert prepared during holy days and festivals both at home and in the temples.
Number of Servings: 12


    Swad brand Cracked Wheat, 0.5 cup
    Horizon 2% orgnic milk, 1.5 cup
    Brown Sugar, .5 cup, packed
    Saffron, .25 tsp
    Cardamom, ground, 1 tsp
    CA golden seedless raisins (1/4 cup)
    Cashew halves (optional)


Pressure cook the cracked wheat with 3 cups of water or boil with enough water till soft. Add all the rest of the ingredients except cardamom and simmer till it comes to boil. Sprinkle with cardamom powder and serve hot or refrigerated. If you refrigerate, this sweet dish will become thick, add more milk to thin.

Optional: Roast a hand ful of cashew halves ( or blanched almonds) in a little butter or ghee and pour over the sweet.

    Kheer as you know is prepared with more fattening coconut milk, more jaggery or sugar and cracked wheat is fried in ghee. I tried to cut everything to make it light! :-)
    One can also add poppy seeds which will help with sleep, by blending it with milk till smoth.
