Ingredients


    Ingredients:
    Black beans (canned or cooked), 1 cup
    Extra Virgin Olive Oil, 1 tsp
    Mango, 1 whole, diced
    Peppers, sweet, red, 1/3, diced
    Farro,dry, 0.25 cup
    Barley, pearled, dry 0.25 cup
    Kamut (grain), 0.25 cup
    Wheatberries (dry), 0.25 cup
    Imagine Organic Vegetable Broth, 2 cups
    Cornstarch, 1 T
    Carrots, raw, 1 cup, chopped
    Onions, raw, 1 cup, chopped
    Orange Marmalade, 1 tbsp
    salt, pepper, red pepper flakes, cumin

Directions

Soak farro, kamut and wheatberries overnight.
Cook grains (above) in boiling war for 5 minutes, add barley and cook additional 10 minutes. Drain, save water.

Saute carrot, red pepper, onion in olive oil until tender. Add mango and black beans. Add broth.
Combine cornstarch with 2 T water. Add to mixture, adding grain water if too thick.
Add marmalade
Season with salt, pepper, red pepper flakes, cumin to taste.
Add grains.
