    Rotisserie chicken, 3 cups
    15 oz can italian style stewed tomatoes
    mozzarella cheese, 1.5 cups
    Philadelphia cream cheese, chive and onion, 8 oz
    Onion, 1 cup, chopped
    Olive oil, 1 Tbsp
    Penne pasta, 8 oz
    Frozen chopped spinach, 10 oz.


Preheat oven to 375 degrees. Prepare penne pasta according to package directions; drain, and add to large bowl. Saute onions in olive oil until golden. Add thawed spinach (excessive liquid squeezed out), and saute until all liquid is absorbed, and leaves are limp. Add spinach and onion mixture to bowl of pasta, and add remaining ingredients except for mozzarella cheese. Place in 9x13 glass dish sprayed with cooking spray. Spread mozzarella cheese on top. Cook covered for 30 min. Remove foil, and continue baking 15 minutes or until cheese is golden and bubbly. Let cool, and serve.
