Ingredients

1 pound (453g) red potatoes
1/4 cup light butter (Land O Lakes used for recipe)
1/4 cup 2% milk
Tips
To get a creamier mashed potato, let your milk and butter reach room temp. and use a hand mixer after mashing to blend out the lumps.
Directions
Peel potatoes, leaving the tops and bottoms unpeeled, and cut into quarters. Place in stock pot of cold water and bring to a rapid boil. Slightly reduce heat and boil until potatoes are fork-tender, about 12 - 15 minutes. Drain potatoes and return to pot. Add butter and milk and mash until desired consistency is reached.
