Ingredients

    Carrots, raw, 4 cup, grated
    *Whole Wheat Flour, 2 cup
    Banana, fresh, 2 medium (7" to 7-7/8" long)
    Cinnamon, ground, 2 tsp
    Baking Powder, 2 tsp
    Baking Soda, 1 tsp
    Salt, 1 tsp
    Sunflower Oil (oleic), .375 cup
    Coconut Oil, .375 cup
    Granulated Sugar, .5 cup
    Brown Sugar, .5 cup, packed

Directions

Mix wet, keep carrots separate
Mix dry
Mix wet and dry, then carrots
Spray pan, add mixture
Bake @ 350 degrees F for 45-50 min or until toothpick test is clean

Serving Size: Makes 1 - 9x13 sheet cake, serves 16
