Ingredients

    1pound portabella caps, stems removed and cleaned
    1 c Reduced fat mozzarella cheese
    1/2 cup finely shredded Parmesan, divided
    3/4 cup thawed frozen spinach
    6 kalamata olives, finely chopped (about 2 T)
    1/2 t Italian seasoning
    1/4 t salt
    1/4 t fresh black pepper, divided
    1/2 cup prepared marinara, I used Ragu in my recipe

Tips

Great with bread, salad, or spaghetti with leftover marinara.


Directions

Clean mushrooms and cook on a sprayed cookie sheet, sprinkle with salt and half the pepper. Make sure there is a lip on the pan since the mushrooms produce liquid. Cook, gill side up, in a 400 degree oven for 20 minutes or until tender. Remove from oven and carefully drain off liquid.
While mushrooms are cooking, combine the spinach, mozzarella, half the Parmesan, olives, Italian seasoning, and the rest of the pepper. Heat the marinara.
Place mushrooms back on the cookie sheet gill side up. Place about 1 tablespoon marinara. Top with about 1/3 cup of filling, depending on how many caps you have. Top with remaining cheese and put back in oven for about 10 minutes.
