Number of Servings: 7


    7.5 cups peeled and cut up butternut squash
    2 T extra virgin olive oil
    1 t curry powder
    1/4 t onion powder
    1/4 t garlic powder
    dash white pepper
    1/4 cup water


Heat oil in large saute pan. Add a couple bits of the squash, and when the oil starts bubbling around them, add the rest. Sprinkle with curry powder, onion powder, garlic powder and white pepper. Saute uncovered on high for about 4 minutes, stirring to incorporate spices. Add 1/4 cup water, then cover and cook on low heat for 14-15 minutes, until squash is soft.
