    110g Kohlrabi, diced
    280g Chayote Squash, diced
    1 cup Mixed vegetables, canned
    60g Onion, diced
    1 tsp Safflower Oil
    1/2 cup Low fat Thai Coconut Milk, Globe brand
    1 cup Unsweetened Almond milk Coconut milk blend
    400g Chicken Breast, diced
    1 cup Chicken Broth
    1 Tbsp Peanut Butter
    2 Tbsp Mixed Vegetable Pickle, Raji or comparable
    1 Tbsp Coriander Pickle, Pickle or .5c Chopped Celantro
    1/2 tsp Adams Garlic Salt
    5 drops liquid Steevia or other Non calorie sweetner to taste.


1. Chop veggies and add to 12" sauce pan with Safflower oil and chicken Broth. Cook on med low 10 min.
2. Steam Chicken in Microwave while veggies are cooking.
3. Add Chicken to vegetables along with Coconut and Almond milk.
4. Add seasonings stir and cover, stirring every 5 minutes for 20 minutes.
5. Add Peanut butter and Steevia, stir and cook an additional 5 minutes.

Serving Size: Makes 4, one cup servings. 1 cup = 211g
