Ingredients

    persimmon pulp, 1 cup
    Granulated Sugar, 1 cup
    Egg, fresh, 1
    Cinnamon, ground, 1 tsp
    salt, 0.5 tsp
    baking powder, 2 tsp
    Milk, 2%, .5 cup
    *Canola Oil, 1 tbsp
    *Flour, white, 1 cup

Tips

Grandma had a persimmon tree on the edge of their field and we picked up the ripe persimmons in the fall and fixed this recipe.


Directions

Combine dry ingredients. Add wet ingredients. Mix.
Bake at 350 degrees until knife inserted in center comes out clean. (Check first at 30 minutes)

    This was tasty, and I wouldn't have thought to use the persimmons this way if I hadn't seen this recipe. I expected the texture to be like pumpkin pie, but it's more like spoonbread. I still have lots of persimmons left to experiment with! :) - 1/15/13
