    120g carrots, diced
    1 granny smith apple, peeled and chopped
    1/2 cup low sodium chicken broth
    1/2 cup water
    minced ginger
    diced white onion
    minced garlic
    dried thyme


Adapted from
- you may stir in a little plain yogurt for garnish.


1. Saute onions until translucent. Add garlic and ginger.
2. Add carrots and apples. Sautee for a bit then add stock and water.
3. Simmer for 15 minutes or until carrots are tender.
4. Puree the mixture.
5. Return to sauce pan, season with salt, pepper and thyme.

Serving Size: 2 cups of soup
