    *ASDA frozen prawns, 400 gram(s)
    *Extra Virgin Olive Oil, 0.5 tbsp
    Onions, raw, 1 large
    Ginger Root, 1 tsp
    *Chopped tomatoes in tomato juice (tinned), 220 gram(s)
    *Blue Dragon Coconut Milk Light, 400 gram
    *Coriander, fresh, 4 tbsp
    *Thai Red Curry Paste, 2 tbsp


Serve with cooked jasmine rice.


Fry off onion in oil for a few minutes until softened. Add ginger and curry paste. Add coconut milk and chopped tomatoes and simmer for a few minutes. Add frozen prawns and bring almost to the boil. Allow to simmer for 15 minutes. Scatter over a tablespoon of fresh coriander (per person) when serving.
