Ingredients

    1 bag cole slaw mix
    1 cup shredded carrots
    1 bell pepper, sliced thin
    2 apples, sliced thin or chopped
    15 kumquats, sliced thin, seeds removed
    4 T seasoned rice vinegar
    1 t sesame oil
    2 T lime juice
    1 pkt Splenda
    1.5 t grated ginger root
    0.5 T black sesame seeds
    1 t fennel seed, ground
    salt to taste
    pepper to taste

Directions

In medium bowl, mix slaw, carrots, bell pepper, apple, kumquats.

In a small bowl, whisk vinegar, oil, Splenda, ginger, juice, fennel, salt, pepper, sesame seeds

Pour dressing over vegetables and toss well

Serving Size: Makes 5, 1.5 c servings
