Ingredients

1 x 100g skinless chicken breast
1 tbsp runny honey
1 x 10g slice cheddar cheese
half red onion, sliced
1 tbsp Thai sweet chilli sauce
Salt and freshly ground pepper

Make two portions and let one cool and use as a lunchtime option
Directions
1 Preheat the oven to Gas Mark 6, 200c, 400F
2 Season the chicken breast with salt and black pepper and place on a chopping board. Using a very sharp knife, make a pocket in the chicken breast
3 Insert the slice of cheese and the onion slices into the pocket and place the chicken on a non stick baking tray
4 Mix the chilli sauce and the honey together and pour over the chicken. Bake in the oven for 25-30 minutes until the chicken is cooked through in the centre
5 Transfer to a serving plate and garnish with red onion if desired. Serve with fresh vegetables or a mixed salad.
