Ingredients

    6 large eggs
    pre-cooked ham (about 3/4 cup)
    2 pre-cooked sausage links
    1 cup fresh spinach
    4 medium fresh mushrooms
    1/2 large onion, chopped

Tips

We like to make this the night before and reheat as needed.


Directions

Scramble eggs in medium bowl, set aside.
Chop up other ingredients, and saute onions, mushrooms, precooked ham and sausage until onions are translucent. Transfer to another bowl, and add in spinach. Grease a glass baking dish (we use an 8x8), pour in eggs, then stir in other ingredients. Bake in a preheated 350 F oven for about 30 mins.
