    Sliced fingerling potatoes
    3 slices of thick sliced bacon (applewood flavor), crumbled
    3 T bacon drippings
    1 T Olivio (olive oil and margerine)
    Cooked Turkey breast, 8 oz. (smoked at home with lemon, rosemary, and apple vinegar), cut into bite sized pieces
    1/4 cup turkey gravy
    1/4 of an onion, chopped
    3 gloves of garlic, minced
    1 can of asparagus, though fresh would be much better in this recipe.


Fresh asparagus is best and will hold up much better than canned, with much less sodium. My turkey was smoked with lemon, so when using roasted or cooked turkey, add juice and zest from the lemon as you are heating the asparagus.


If you have the time, smoke a 12 lb turkey using lemon, rosemary, and apple vinegar as a brine.
Debone the turkey and reserve 8 oz of cooked turkey breast, cut into bite size pieces.
Cook bacon in a pan until crisp, removing from the pan to drain
Slice fingerling potatoes
Add 1 TB of olivio to hot bacon grease, add slice potatoes and saute until crisp, turn and crisp the other side.
Add dash of kosher salt and ground black pepper
Add onions and garlic and saute quickly
Add turkey pieces and heat
Add cut up asparagus, one can
If using fresh asparagus, toss in with the onions and garlic until asparagus is crisp and bright green
Add turkey gravy and heat

Serving Size: Makes 4 servings
