Ingredients

    Eggs, Coconut Oil, Coconut Flour, Zucchini, Raw honey, Cinnamon, Ginger, vanilla extract

Directions

Combine zucchini, coconut oil, honey & vanilla extract in a bowl. In another bowl, combine all dry ingredients. Gradually mix dry ingredients into wet ingredients until well mixed. Pour into muffin tins, and bake at 350F for 40-50 minutes or until toothpick inserted into middle of muffin is clean.
