Ingredients

    Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup

    Olive Oil, 2 tbsp
    Onions, raw, 0.5 large
    Carrots, raw, 1 medium
    Egg, fresh, 2 extra large
    Breakstone's 2% Milkfat Small Curd Lowfat Cottage Cheese, 4 oz
    *Tillamook Pepper Jack Cheese, 2 oz
    Bread crumbs, dry, grated, plain, 0.5 cup

Directions

Preheat Oven to 350. Cook quinoa according to instructions on the box (I used my rice cooker). Saute onion and carrots in oil until soft. Add cooked quinoa, remove from heat stir in egg and cottage cheese. Place in bakeware and cover with cheese and breadcrumbs. Bake for 30 minutes or until cheese is melted to liking.
