JIffy mix made with egg white and water. JIffy mix made with egg white and water.

    Corn muffin mix, Jiffy brand
    Egg white, 1 large
    Water, 3/4 cup


Mix water and egg white separately. Add to mix and stir until just barely blended. Let sit 5 minutes before baking for lighter texture. Bake in free-standing paper cups.


Bake 12-15 minutes @ 400 degrees.
