    8 oz. soy sauce
    1 tsp. garlic, minced
    1 tsp. ginger, minced (optional)
    2 tbsp. brown sugar
    1/4 c. wine
    4 salmon fillets
    1 tomato, seeded and diced
    1 can (12 oz) crushed pineapple
    2 green onions, chopped
    1/4 bunch fresh cilantro, chopped
    1/2 jalapeno, seeded amd minced
    2 tsp. lemon juice
    1 tbsp. garlic, chopped
    1/2 tsp. salt, to taste


To make the marinade, combine the soy sauce, garlic, ginger, brown sugar, and wine. Marinate the salmon while making the salsa. In a medium bowl, mix together the tomato, pineapple, onions, cilantro, jalapeno, lemon juice, and garlic. Add salt to taste. Set salsa aside while cooking the salmon. Remove the salmon from the marinade and pat dry. Bake 400 for 8-10 minutes or until salmon flakes. Serve the salmon with the pineapple salsa.
