    1 1/3 C. tomato, chopped
    1/2 C. sun-Dried tomatoes, packed without oil
    2 T. balsamic vinegar
    1 T. olive oil
    1/4 tsp. salt
    1/4 tsp. pepper
    2 garlic cloves, minced
    3/4 C. water
    16 C. romaine lettuce, torn into pieces
    1 cucumber, peeled and seeded
    8 slices red onion


Combine the first 7 ingredients in a blender; process until well blended. Gradually add water, process until smooth. Arrange lettuce on serving plates. Top lettuce with cucumbers and onion slices. Spoon dressing over each salad. Reserve remaining dressing for another use. Serves: 8, ~2 cup serving with 2 T. dressing
