Introduction

Ingredients

    2 cups Pinto Beans, cooked (may use canned but calories
    will go up)
    1 cup dry bread crumbs
    2 lg eggs, lightly beaten
    3 garlic cloves, minced
    1/2 cup green onions, chopped
    1 cup fresh mushrooms
    1 tsp coarsely ground black pepper
    1/2 cup water

Tips

I put the beans in the food processor to get the fine minced texture.


Directions

1. Cook pinto beans according to package directions.
2. Reserve 2 cups of water from beans
3. Mash beans until a crumbly texture.
4. Put garlic, green onion and mushrooms in food processor. Mince.
5. Saute garlic, green onions and mushrooms for 5 - 7 mins.
6. Mix beans, bread crumbs, eggs, pepper, garlic mixture, and 1/2c of reserved water in a medium bowl. Divide into 6 4oz patties.
7. Spray skillet with cooking spray. Cook patties over med-high heat turning only once, until a crisp brown crust forms on both sides, about 5-6 mins.
8. Serve on bread or buns, adding your favorite toppings.
