Ingredients

    Tomatoes, 6 large
    onions, 3 medium
    Garlic, 3 TBS minced
    Beef, chicken, or veggie broth (beef makes soup much richer), approx 3 cups
    salt and pepper to taste
    Splash of milk, for creaminess

Directions

Oven roast wedges of tomatoes, onions and garlic (sprinkled with salt and pepper) in cast iron skillet approx 20 minutes at 425F. Transfer to stockpot and add broth. Puree with immersion blender (or use blender, in batches). Splash with milk. Add fresh basil. Delicious!
