Introduction

My first attempt at sharing a recipe. This is a hearty meal, you can up the servings if you do not want such a filling meal. My first attempt at sharing a recipe. This is a hearty meal, you can up the servings if you do not want such a filling meal.

Ingredients

    *Ronzoni, Whole Wheat Penne Rigate, 2 oz

    *Peppers, sweet, red, fresh, 1 cup, chopped

    Onions, raw, 1 cup, chopped

    Olive Oil, 1 tbsp

    Mushrooms, fresh, 2 cup, pieces or slices

    Chicken Breast, no skin, 8 ounces

    Canned Tomatoes, 3.25 cup

Directions

Cook pasta as directed on package. I used frozen chicken tenders, so I heated the olive oil in a deep skillet, added chicken, covered and let cook for ten minutes.. Using a wwoden blade, I rough chooped the chicken. I then added the chopped onion (I used red), the chopped red pepper and the mushrooms to the chicken. I stir fried for about 5 minutes. I then added the the large can of petitie diced tomatoes in juice and seasoned to taste with oregeano and basil, salt and pepper. I simmered for about 15 minutes, then stirred in pasta to heat. As a treat you can top with 1/4 cup low fat mozzerella cheese for an additional protien serving.
