Number of Servings: 5

Ingredients

    5 Chicken Breasts
    2 Chicken Bouillion cubes
    1 cup onion
    1 clove garlic, crushed
    Tortillas
    Salsa
    Sour cream
    Cheese- for health info, used Kraft. In reality, we use a crumbled Mexican cheese
    Lettuce- shredded

Directions

Boil chicken in water with bouillion cubes, onion and garlic. Once cooked through, shred with a fork. Heat tortillas (I do it in the microwave, about 1 minute for 5 tortillas). Spoon meat into tortillas and roll. Top with salsa, sour cream, cheese and lettuce.

Serving Size: Makes 5 servings of 5 enchiladas each
